In celebration of delicious food ‘erry day, this 5-minute vegan basil pesto sauce should be a done deal in your book. Like, you MUST make it you know you love pesto and you KNOW its green yumminess is just begging you to throw it in a blendah and go crazy!
That’s not just us, right? Mmmm….
Before we went 100% vegan, one of June’s fave “convenience foods” was Amy’s Organic Pesto Tortellini Bowl. While yummy, that cheese filling was no longer on the menu.
Not to worry!
Basil pesto is a cinch to whip up and aside from the basil, I am willing to bet you have 99% of the things you need, and 100% of the things you can substitute!
So when June came asking if regular pesto was vegan, we decided to get into the kitchen and see!
Of course, the answer is yes!
Traditional pesto has parmesan cheese. We’ve substituted a bit of nutritional yeast to mimic the texture and flavor of parmesan. And honestly, it might be better than the original! Nutritional yeast is easily found in most grocery stores these days, but if you can’t find it, you can order it online from the link above, or just skip it and you will still have a yummy sauce!
The process is ridiculously simple..hence why you only need 5 minutes to pull this off!
Simply add all of your ingredients to a food processor, and whir away for about 2 minutes, till the nuts and everything else is nice and chopped up, but you probably don’t want a completely smooth puree, so keep an eye on it!
When shopping for pasta my grocery store had a BUY 2 GET 3 FREE deal…so guess what we did? Yeah you better believe we came home with 5 boxes of pasta!
One of them was this awesome twisty guy called Trotolle. How cool do they look?
That yummylicious pesto is going to fill all those bends and crevices for ultimate joy! Here, the first meeting of pasta and sauce *swoon*.
Toss everything together and serve right away for the easiest, quickest meal you’ll ever pull off…and I mean it’s pesto everyone will think you are fancy and awesome! Go you!
June completely approved. She has been learning so much about nutrition labels and ingredients as she navigates her new lifestyle, it’s really awesome to watch.
If you have any vegan questions for her, be sure to comment below because we are working on a Q & A so June can answer all of your questions about what it’s like to be a vegan kid!

But most importantly, enjoy!

- 2 c. fresh basil leaves lightly packed
- 1 c. fresh spinach lightly packed
- 2 cloves garlic
- 10 almonds
- 1/2-3/4 tsp. salt
- 1/4 tsp. black pepper
- 1/4-1/2 c. olive oil

Oil and salt measurements are based on taste. Start with the smaller amount and add more as needed for flavor or consistency.
Nutritional yeast can be omitted if not available. Nuts can be replaced with a different nut such as cashews, pine nuts, walnuts, pecans, etc.
If serving with pasta, gluten-free pasta can easily be used, and we actually prefer it usually!
