Ok, ok…I promised myself I wouldn’t get too swept away in the pumpkin craze this year…yet here we are again with this Healthy Mango Pumpkin Smoothie!

I can’t stop making these. All I can say guys and gals, this recipe is SO worth it.

First off, this smoothie is SO good for you. Pumpkin is a little superfood in its own right and I think it often gets overlooked for that! Pumpkins are loaded with fiber, vitamin A, vitamin E, folate, iron, potassium, niacin…and the list goes on.

In fact, did you know that pumpkins offer you over 100% of your daily vitamin A needs? So cool!

The other thing that’s great about this smoothie is that it’s not overwhelmingly pumpkin-y. It’s actually quite refreshing and delicious.

The mango and lemon juice gives it a perfect bit of tart sweetness. The almond milk makes it creamy and delicious, and the cinnamon and maple syrup round out that holiday flavor you are looking for without going overboard!

So, let’s get our fall smoothie groove on shall we!

All you need to do is combine all of your ingredients in the order listed:

Almond milk

Cinnamon

Maple syrup

Lime juice

Ice cubes

Carrots

Mango

Pumpkin puree

…and at the end you have the option to add 1 frozen banana. This is mostly for added sweetness, if you need it. I found I enjoy both versions, but the banana is good to add if you have one on hand.

When I buy bananas and they turn too brown to eat fresh, I just peel them and toss them into a plastic container in the freezer. That way I always have bananas ready-to-go for a deliciously refreshing smoothie anytime! Yay!

Healthy Mango Pumpkin Smoothies!

Ingredients

  • 1 c. Almond milk any variety
  • 1 tsp. Cinnamon
  • 1 tbsp. Maple syrup
  • 1 squirt Lemon juice
  • 3 Ice cubes
  • 1/4 c. Carrots
  • 1/2 c. Frozen mango
  • 1/2 c. Pumpkin puree
  • 1 Frozen banana optional

Optional Garnishes

  • 1 tsp. Pepitas
  • Sprinkle of cinnamon

Instructions

  1. Combine all ingredients in order listed and blend until completely smooth.

  2. Pour into a serving glass.

  3. Garnish with pepitas and cinnamon.
